Limes are the ultimate culinary spark plugs. Small, vibrant, and packed with an intense, tongue-tingling acidity, they have the magical ability to elevate almost any dish or drink they touch. But don't let their size fool you—limes are historical heavyweights. Famous for saving 18th-century sailors from scurvy, these little green gems are absolutely brimming with protective antioxidants, essential oils, and an incredibly high concentration of pure Vitamin C.
When hunting for the perfect lime, ignore the texture and focus on weight and skin. Look for limes that feel surprisingly heavy for their size—that means they are packed with juice. Choose ones with smooth, slightly glossy skin and a bright green color; a slight yellowish tint is actually fine, as it means the lime is fully ripe and extra juicy! Avoid any that feel rock-hard or have shriveled, leathery skin.
Limes love a cool environment. While they look beautiful sitting in a bowl on your kitchen counter, they will only stay fresh there for about a week. To make them last up to a month, pop them into a sealed plastic bag and tuck them away in your refrigerator’s crisper drawer. If you only use half a lime, wrap the remaining half tightly in cling wrap or place it in an airtight container and use it within a few days.
