Gently squeeze the avocado in the palm of your hand. If it yields to firm, gentle pressure, it’s ripe and ready for tonight's dinner. If it feels rock-hard, it needs a few days on the counter. Check under the tiny stem cap at the top: if it’s green underneath, you’ve hit the jackpot; if it's brown, it might be overripe inside.
Keep hard avocados on the counter to ripen. To speed things up, place them in a paper bag with a banana or apple. Once ripe, move them to the fridge to stall the ripening process for up to 3 days. If you have a leftover half, squeeze a bit of lime juice over the flesh and press plastic wrap directly against it to stop it from turning brown.
